Ethan and I loooove Friday nights without plans. We watch A&E's weekly marathon of Criminal Minds reruns. I try to cook something he'll look forward to, and tonight it was Salsa Chicken. I altered the recipe a little bit: I don't use any oil to cook the chicken, I use way more salsa than it calls for, I omit the cheese, and I add a can of green chilies. It really is a healthy recipe, basically chicken, salsa, and rice.
Sounds really good! Sean would love it-and I'd probably use the cheese instead of cutting it out. :)
